Creamy Avodill Salad
This summer is turning out to be a really sunny one. The garden is growing like crazy and the plants in the greenhouse are soon making their way out the door. Today we made a beautiful salad with all the colors of the rainbow with green and blue from the garden. Chard, lettuce, parsley, chives, dill and borage.
With it I made this swedish summer tasting creamy salad. It turned out too delicious not to share! It's super easy and fast to make, perfect for summer time when you have better things to do than stand in the kitchen all day.
- 2 Avocados
- 1/2 dl chopped dill
- 1/2 medium sized red onion
- 2 Tomatoes
- 1/2 Zucchini
- Juice from half a lemon
- Salt and pepper
Mush the avocados with a fork in a big bowl. Mince the dill and red onion.
Chop up the tomatoes and zucchini in to small cubes.
Mix everything together with the avocado mush and season to taste with lemon juice, salt and pepper.
Roll it up with some lettuce in a nori sheet, use it as a spread on your raw bread or eat it just like it is. It's fresh, creamy and has lots of flavor :)
