Birthday Ice Cream Cake
I love birthdays. They are always filled up with the best things ever. Hugs, smiles, love, laughs, well wishes and of course... cake!
On my birthday I decided to come up with my first cake recipe and after a while of pondering how to make it I remembered I had frozen bananas..

This cake has a bunch of layers which means more steps but maan it's worth the effort.
Start with making the crust by mixing almonds in your food processor into a flour. Add dates, coconut flakes and a pinch of salt. Process to a dough and spread evenly in a spring-form pan. Store the crust in the fridge while making the next layer.
For the lime layer start with processing the cashews to a flour. Add the other ingredients and blend until it gets smooth. If you don't have coconut flour it probably works just as well to mix in coconut flakes with the cashews in the beginning. Spread this green goodness over the crust and store in the freezer while making the strawberry layer.
Get the frozen banana dudes and the strawberry ladies out of the freezer and let them join together in the food processor for an ice cream orgy! It will take a while for it turn into ice cream, first you will get a gritty mass and you might have to use a spoon to scrape it of the sides. Hang in there, it will turn into creamy delicious ice cream! Spread this evenly over the lime layer and put the cake back in the freezer while making the blueberry sauce.
Mix the blueberries with maple syrup in the food processor until smooth. Pour and spread it evenly over the cake. Top with coconut flakes.
Store the cake in the freezer but let it stand in room temperature for a while so it softens a little before you eat it.
